All USDA Prime Beef is not equal. Although less than two percent of American beef is of sufficient quality to earn the coveted USDA Prime rating, it may not be good enough for us. There are always variations in marbling, texture, and color that can make a tremendous difference in taste and tenderness, which is why we hand-select our beef to the highest internal standards.
Once we approve the meats, we age them to perfection on-site in technologically advanced coolers, maintaining a meticulous balance of temperature, humidity, and air circulation to ensure that every bite delivers the optimum in flavor and tenderness.
Finally, each steak, roast and chop is hand-cut by our own master butchers in a state-of-the-art facility that goes beyond government requirements for food safety and, in our opinion, far exceeds the practices of other shops. It's only after every cut has gone though our own ten-step approval process that it is shipped to you.
Our filet mignons are slowly WET-AGED for buttery tenderness and delectable flavor that is unique to Allen Brothers. We start with the very finest cuts of USDA Prime and Choice available.
Our USDA Prime Sirloin Strip Steaks are the ultimate indulgence. A fine, silky texture and rich marbling combined with OUR WET-AGING PROCESS give Allen Brothers' these strip steaks an incredibly robust flavor and juicy tenderness. Cut from the center of the beef loin, it's the most outstanding steak-lover's steak available.
Thick-cut from our succulent rib roasts, Allen Brother's WET-AGED RIBEYE STEAKS are distinguished by their rich marbling and the natural "flavor kernel" that runs through each steak.
Our bone-in veal shank is heavenly when braised in the old Italian style for osso buco. This rich, slow-cooked dish produces fall-off-the-bone tender veal loaded with flavor. The bone-in presentation is not only dramatic - the succulent bone marrow is considered a delicacy.
