Legal’s origin is traced to 1950 when George Berkowitz opened a fish market next to his father's grocery store in Inman Square in Cambridge, MA. In 1968, George and his wife, Harriet, opened their first seafood restaurant next to the fish market.
Now under the leadership of Roger Berkowitz, George’s son, Legal operates over 30 family-owned restaurants from Boston, MA to Florida. For three generations, the Berkowitz family has continued this tradition of serving the highest quality, freshest fish delivering value in every morsel.
Legal goes the extra mile to ensure the quality of our products so each person who dines on them enjoys the “Legal Difference.” Our conservationist mindset keeps us away from overexploited species, and we insist on the least invasive harvesting practices from our seafood suppliers. For example, we prefer product from dayboat operators – fishermen who go to sea for just a single sweep before bringing their catch to shore. This is costly, but we think it’s worth it to obtain fish that supremely fresh.
A team of microbiologists and laboratory technicians scrutinize and quarantine every lot of shellfish that enters our processing facility – and they don’t release that lot until they are satisfied it meets our demanding criteria. Other purveyors may fret overcyclical concerns such as mercury or Red Tide, but we operate every day as if we were in the public health business! So when we say “If it isn’t fresh, it isn’t Legal!” we really mean it. Our definition of fresh means so much more than ‘not previously frozen’. The definition is in an entirely different league.
But even that’s not enough to satisfy our passion to be the best. We want every single ingredient used in Legal recipes to be of the utmost quality. We literally search the world to select the finest and most flavorful goods. For example, we buy vanilla from Tahiti, saffron from Spain, olive oil from Italy, jasmine rice from Thailand, and coffee from Costa Rica.
Simply delicious doesn’t cut it at Legal. We demand nutrition and value as well as taste in every dish we prepare. That’s the Legal difference.
